The calculations are obviously to take your mind off things and distract you. Then when you're not preoccupied with other thoughts you're asked to pick some objects.
Now, the way they can predict what people will pick is based on a simple principle of how we remember things. Everything in our memories, all objects, are split up in categories. And for each category there is one "prototype".

For numbers, there are many possibilities to chose the prototype from. Out of simplicity, most of our brains use a single-digit number, usually as low as possible. By not letting you pick a number between 0 and 10, but rather 5 and 12 they restrict the amount of single digit numbers to choose from. Most people won't pick 5 because it's already in the instructions, so the next-best thing is 6, which most people will think of as too low, because it's just one step above the instructions. Now, 7 looks like a good option to most people.
For vegetables, the explanation is even easier. The carrot is just the most common "prototype" used in our memory.

If you do the same things with tools, most people will choose a hammer. Use colors, most people will choose red. Instruments, most people will choose a guitar.

So why is a carrot our "default" vegetable? Is it the color? The name? No, I'm going to take a guess and say it's the shape. I can't think of any vegetable with any more of a phallic shape than a carrot, so anyone who chose a carrot must be gay. I, on the other hand, who chose a vegetable that looks much more like a boob (cauliflower), must be straight.

I thought of 8 though, as my number.

i picked 12 and then firstly the number 4 until my mind went "wait 4 is not a vegetable" then i chose potatoe.
