Just a heads up, you can't overclock properly on a H67 board, you need a P67 one.

Thinking about getting some new computer parts, what do you guys think of this:

What I am really querying is the RAM. If I am correct, some i7's are triple channel and some are dual? I have 6GB DDRII RAM atm, and dont really want to go backwards, hence the 3x2GB sticks. At the moment I have the same configuration and my processor/motherboard is dual channel so does it even matter? I havent had any noticeable problems.

I have a good quality 620W Corsair PSU, I assume the new stuff wont really ramp up the power requirements.

Yep, as fin said only 1366 processors are tri-channel. Sandy Bridge is dual-channel DDR3. So you either need to buy an LGA1366 i7, or new ram.

So, long story short... I am dismantling a bunch of circuit boards from our super old computer parts we have taking up space in our attic for some crfaty projects...

I am able to remove all the chips and what not, but I am left with jagged and pokey parts.  I need the cucuit board to be relatively smooth.  What would be the best way of getting to that point? I have a soldering tool...would heating up those parts allow me to dull the sharpness? tia

Is it the PCB or the remaining solder that's sharp? PCB edges can be sanded, (Though wear a mask and do it in a garage or outside. It's very not good for you to inhale.) and you should be able to get rid of any sharpened solder with a 45-60W iron and something like a sewing needle or the corner of a damp sponge to extract the excess.
