Speaking from experience, the hardest part was to actually get it to release the projectile from the pouch

building it is easy, the hardest part is just getting the pouch to release the ball/projectile at like 45 degrees or whatever it is that is the optimum release angle is
hinged masses are superior to fixed, keep bucking of the trebuchet to a minimum, etc
if you can afford it use bearings

I seem to recall that you just knock the hook a little closer to the lever if you want it to launch at a lower angle. At least, that's what they did in the middle ages, before our new-fangled technology.Blehm98 wrote:

IIRC if it has wheels on the bottom it will have a lot more power (thats for a normal one, not sure if youre trying to build the kind in the video)
