Just another few things I noticed while playing through it a few more times:
I don't like the way the TIE's in the hangar explode then vanish no matter what you do with them. Throw them across the room they explode+vanish (ok), place them on the ground then let go they explode+vanish (err). Why can't I hurl them across the room and see them dent and crumple when they hit the wall and then crash into the ground in a pile of twisted metal.
ARGH! WHY is that goddam limit on your force powers there. I know there needs to be some sort of limit, after all, grabbing the 'unlimited force power' powerup in the hangar basically makes you into an unstoppable force for a minute or so, however, the force grab should
not be limited like that. It's so irritating having to stand there and wait 10 seconds before you can grab something again. It adds nothing to the game and just breaks up the flow.
I love the grab + lightsaber throw combo. Especially when I then move the guy around other enemies while it's still in him and they all die instantly too.
I like the way if you hold a guy in front of you for a while he fires a few shots at you. What I don't like though is the way that if you hold a rebel and move him about he'll say things like 'help' and 'no'. If you then put him down he just starts shooting at you again. I don't know, I just think if you do that sort of thing they should either run away or something. It seems very unrealistic for someone to plead for their life, be put down again, shoot you again at point blank range, be picked up, etc etc.
The movement feels rubbish. Just in general. Try jumping to the top of the crashed shuttle or onto one of the metal walkways from the hangar floor. It's not hard to do, but it feels terrible and completely lacks any sort of precision. I hope there aren't any jumping puzzles in the game

I noticed you can dent heaps of wall panels in the corridors. This just reinforces my belief that this is a missed opportunity of a game. The technology is there but it's just not used in gameplay! They could've made something incredible!
Overall. Hmm. I was really looking foward to this ever since they first showed videos of the material technology and the AI technology, but this demo was a complete turn off. For all the reasons I mentioned and maybe a few more that i can't remember.
