After a couple of hours of practice I've got it down to a science. It's pretty straight forward although I suggest you should be able to do it ten times in a row without a mishap before you try it on a ranked server!
Beginners:
Approach carrier or wherever you want to land at approximately 700-800kph. Around the point that you hear the engine revs start to drop.
At 500m from the carrier reverse thrust until your speed reduces to 500kmh

Pull up the nose of the aircraft until your artificial horizon is level with the bottom of the central ring.
Hold the nose at that level until you are hovering.
To land on the carrier you should be at approx. 30-35 metres.

Place the artificial horizon at the top of the central ring to guide your aircraft onto the runway.

[b]Advanced:[b]
Usually you'll be coming in hot from a firefight so I'll assume that you'll be going at top speed, sans after burners.
At 700m from the carrier drop the throttle. Point your nose at the carrier where you want to land
When your speed drops to 650kph reverse thrust and hold. Pull up on the nose to a 45 degree angle.
Starting at a height of 100m you should hit the carrier dead on.
