Then what makes a better rancher SM? A guy that sells a product that people want while taking minimal risks, or a guy that sells them a product that is inferior while taking more risks? Old meat is tougher meat. Grass fed meat is not as juicy as corn finished meat. So you prefer that people pay twice as much for older, less juicy cuts of meat? Luckily, there's been a market for such meat created over the past 5-10 years by Whole Foods shoppers. If only Whole Foods shoppers would leave the marketing at the door instead of trying to indoctrinate everyone else to justify their spending...

Not as much fat as possible, but a good amount of marbling is essential to a quality cut of beef.

USDA Prime Steaks.

On the topic of steak you can have a fat animal raised normally. They use corn to fatten it faster, making the animal unhealthy; making unhealthy meat.

Also, I have no problem with people making decisions for their own bodies. If they want to eat all organic grass fed beef or be a raw food vegetarian, more power to them. I only take issue with it when they try to force their lifestyle choices on others, or if they mislead others in order to make them make poor decisions a la Whole Foods.
