It probably will be late May. That is If I do Netherlands, Germany, Austria, Switzerland and Italy on the way down, then make my way across to Spain and up the west coast of France on the way back to England.

May is actually the almost perfect time to take a hike up the mountain. If you were coming in the late summer it would probably be THE perfect time, since that's when all the vineyards begin to harvest and start serving wine along the sides of the hiking trails that lead up the mountain. The entire northwest of the city is covered in vineyards with some of the best wine you can get in Austria. Not THE best, but it's pretty damn good stuff.

Yea, the Danube is pretty slick. Vienna, Bratislava and Budapest are all along the river. Aside from Linz and Belgrade, those are the largest cities on the river. Linz can be skipped (it's a nice city, but if you are short on time, don't worry about it) and I doubt you want to go as far east as Serbia. Bratislava you can do in a day - walk up to the castle and have a view of the city and mosey around the old town there and enjoy cheap food and beer.
Never been to Budapest but I've never heard a single bad thing about the city.
Kim: the best part about the mountain above Vienna is that it is still within the city limits. That means easily accessible with public transport should you not feel like walking down or up the mountain! Girlfriend and I walked up the mountain on one of the trails and were going to walk down again but it just got too hot so we cheated and took the bus down. The trails are great, though - walk along the river and then up the mountain and down through the vineyards (or vice-versa) is the route we usually take - absolutely gorgeous.
