Basically you just have to make sure that the trip/block/taxi fuel isn't more than needed otherwise you end up with a landing mass more than safely possible. Which makes you think what would they do if they had to make an emergency landing just after takeoff, surely that's not how they do it

If they have to make emergency landing after takeoff you dump enough fuel to get to MLM. Regulation says the AC has to be able to dump enough fuel in 15mins to get from MSTOM to MLM.
If you can't last 15mins, you just land heavy and probably break something.
