well not necessarily 5%, it can be a lot more than that... people running my system with SLI cards would be getting 8000+ in 3dmark06, but I can only pull ~4200. So right there is a very large increase. I would say that depending on the rest of your system and without having any bottlenecks then having 2 cards in SLI or xfire can be worth it. But as others have said, only if you are running a nice large monitor (I would agree with the Dell 24'' or 30'' - which can even make dual 7900gtx cards choke when running at all high etc) at a high resolution. Since my monitor only does 1280x1024, it isn't worth it to me, but for others it can be. But personally, I would think to get a nice dual core processor, 2gb of ram, etc, then go off and get a second card if you want/need it for what you do.
And for who said to buy one card now and another later when they are cheaper:
I do not believe that it works that way. The cards (at least used to, I dunno if firmware/driver updates can fix this) that they need to have the same BIOS. And since gfx cards bios are updated fairly frequently (probably every few months or so) it would be pretty necessary to get both cards within a small amount of time.
