This might be a stupid question but what does the Yaw factor and Pitch factor in the controls->aircraft do?

Yaw is your rudder movement. When you twist your joystick, or press the A or D key, you plane with move the rudder from side to side, which is yaw.
Pitch is the vertical angle of your plane. By pulling your joystick toward you, you will fly upward. By pushing it away from you, you will dive the nose down.
Roll is determined by the movement of the ailerons. If one aileron is up and the other is down, the plane will roll.
