Yet another delicious treat. Eggs are great, although I really just like them in the scrambled and omelette form. And hard-boiled, I guess.

They're healthy and full of win. It's a great situation. You can let the egg become a chicken and nom nom nom on that, or you can speed up the process and chow down on egg.

Bacon has to be BONE DRY or else it's just sacrilege

edit: When I get bacon with my omelete at a diner I always say, "Can I get that bacon extra crispy?" while making my eyes really wide so they know I'm serious

No fancy presses or flat grills that do not contain the grease.

This is a pound of smoked bacon. Pile it in a dutch oven on the stove over medium high heat. Turn often.

Bacons not healthy?

Man, once you own cast iron, you open a whole new world of culinary delights. Problem is there is nothing better than bacon grease to treat the pans for storage or for non-stik.

Tonight I shall bake a one pound fillet on my cast iron skillet, wrapped in bacon of course.

Compared to eggs, bacon isn't that healthy shame because it kicks ass. Of course, everything in moderation.

IDK if I have cast iron or not, lulz. As for treating pans... when my dad makes steak (especially filet mignon, oh god that stuff is godly) he usually de-glazes the pan with white wine

edit: Ultimate win is an omelette with bacon

Try this ftw

In a sauce pan boil 2 medium potatoes until soft.

Fry bacon until just done, remove. Brown 1/2 pound sausage. Remove. Sautte onions in the bacon grease until they are soft. Remove.

Cover the bottom of the skillet with bread, add the bacon and sausage, a thin layer of cheese ( and whatever, green peppers, tomatoes )and add the potatoes and mash them smooth over the meat and bread. Salt, pepper and fresh basil.

Crack 4-6 eggs and scramble, add a little water, pour over potatoes and bake for 15-20 minutes until the eggs are mostly set, remove, sprinkle with grated cheese and place in broiler for about one minute.

Goes well with bloody marys.

- Warm up two corn tortillas on the stove. Lay them on a plate.
- Heat up a pan with a little bit of olive oil in it.
- Get about 4-6 slices of Virginia Ham and cook each in the pan until the ham is hot and has a little bit of brown on it.
- Place the ham on the tortillas so the meat covers the tortillas evenly.
- In the same pan crack two eggs. Cook the eggs in the olive oil / ham fat. Make them sunnyside/over easy or just fry them. Cook with salt+pepper.
- When the eggs are done distibute them evenly on each tortilla.
- Wrap up each tortilla and chow down. Add hot sauce for an extra kick.

Var Eggspert will be here soon, I'm suprised he hasn't been already.

Scrambled Eggs, Toast and Smoked Salmon for breakfast.  If you really want to feel like royalty wash it down with Bucks Fizz (Champagne and OJ, juice not ex american football star)
