I want to create a world map with a typical dish for a country/province/county.

So! PM me the most typical recipie there is accompanied by you country/province name, or post it in this topic!

Let me kick-off:

Boerenkool met Rookworst (Farmer Cabage with Smoked Saussage)

6 each potatoes    
1 bn kale (to fill a 2 qt. pot)
1 pound smoked sausage    
3 tablespoons butter or margarine
1 x salt and black pepper    

Directions

Peel, cook, and mash potatoes. At the same time, chop kale finely, cook until tender. Dice and cook sausage. Put kale into a blender with enough of the cooking water to make a thick slurry. When done, add to the mashed potatoes. Add cooked sausage. Add butter. salt and pepper to taste. Mix well and serve piping hot.

NOTES: For a more festive apprearance, put into a cassarole dish, garnish with slices of Oude Gouda (Old Gouda) or a medium cheddar and sprinkle with paprika. Place in medium oven until cheese melts and begins to brown.

Oregon Dungeness Crab Cakes

  • 1/4-cup olive oil
  • 1 each diced red pepper
  • 1 each diced yellow pepper
  • 2 each minced jalapeno
  • 2 cups diced white onion
  • 1 bunch sliced green onion
  • 2 teaspoon minced garlic
  • 2 tablespoons fresh limejuice
  • 6 ounce mayonnaise
  • 2 each eggs
  • 1 tablespoon old bay seasoning
  • 2 tablespoon Dijon mustard
  • 6 dashes Tabasco
  • 1 pound Oregon Dungeness Crab Meat
  • 2 cups panko

Sauté the peppers and onions in olive oil until tender. Stir in the garlic remove and lay out on a cookie sheet to cool.
Once cooled, combine all other ingredients in mixing bowl except crab and season to taste. Fold in the crabmeat and
let rest for twenty minutes. Portion into 1/4 cup balls. Shape the balls into cakes, dusting with in additional panko
breading to absorb extra moisture. Heat olive oil in a sauté pan over medium heat, and add the cakes. Cook until
golden brown, about three minutes, then carefully turn the cakes. Brown on the other side of the cakes, then transfer
the cakes to serving platter.
Garnish with the mango salsa and fresh cilantro sprigs and lime wedges and serve.

Texas BBQ Brisket (this shit is good)

1 whole beef brisket (9 to 10 lb.) trimmed

MOP SAUCE:

5 slices bacon, minced
1 c. minced onions
1 1/2 c. beef broth
1/4 c. vegetable oil
1/2 lemon, quartered
2 tbsp. chopped fresh thyme or 1 tsp. dried
1/2 tsp. salt
1/2 tsp. freshly ground pepper

DRY RUB:

2 tbsp. seasoned salt
1 tbsp. cracked black peppercorns
1 tbsp. cracked white peppercorns (I substitute ground white pepper)
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. paprika

1 tbsp. sugar
1 tbsp. distilled white vinegar
10 lb. charcoal briquettes
4 c. mesquite wood chips

Prepare grill. Soak mesquite chips in water to cover.
Mop Sauce: Cook bacon in medium skillet over medium heat until translucent, about 2 to 3 minutes. Add onions and continue cooking until onions are lightly browned, about 5 minutes. Transfer bacon and onions to medium saucepan; add beef broth, oil, lemon, thyme, salt and pepper. Simmer over low heat to blend flavors, 15 minutes. Set aside.

Dry Rub: While sauce is simmering, combine all ingredients in bowl. Rub dry rub over entire brisket until coated. Sprinkle brisket on both sides with sugar, then vinegar.

To Cook: When coals are covered with white ash, add wood chips. When ash begins to form on the wood chips, close vents on grill half way. Place small pan filled with water on one side of grill bottom. Place the brisket on grill directly over drip pan. Cook covered 2 hours, turning once halfway through. Continue cooking covered 2 hours more, basting with mop sauce and turning every 30 minutes. (To keep the grill at the proper temperature, replenish with additional hot coals and wood chips as needed, usually when the meat is turned.)

Preheat oven to 250 degrees. Wrap brisket tightly in heavy foil and place in a roasting pan in the oven. Bake 6 hours or until tender enough to cut with a fork. Carve meat in thin slices across grain to serve.

Hard to get more "Washington" than Coffee and Apples (I suppose seafood is another strong point but not really unique)

Apple Coffee Cake

Topping (prepare first):

2 tablespoons butter
1/3 cup brown sugar
2 cups cored and sliced apples, may be left unpeeled
dash cinnamon

Melt butter in medium sauce pan. Add brown sugar and cinnamon. Stir until combined. Add apple slices. Stir and simmer on a low heat while you mix the cake batter.

Combine:
2 cups flour 2 1/4 tsp. baking powder 1/2 tsp. salt Mix in separate bowl: 1/2 cup shortening 1/2 cup sugar

Add to shortening and sugar mixture, mixing well after adding each egg:
3 eggs

Add dry mixture to the batter alternately with:
1 cup milk

Pour batter into greased 9 x 13 inch baking dish. Spread apple topping over batter.

Bake at 350°F. for 30-35 minutes.

The staple food for India is dahl and rice, so heres a recipe

Dahl, also spelled Daal, Dal or Dhal, is a traditional dish eaten in the Indian subcontinent. It is suitable for vegetarians, tasty and can be made from a variety of pulses as well as red lentils1.

Ingredients2

500g dried red lentils
1 1/2 large onions (or two medium ones)
6-7 large cloves of garlic
Some ginger (about half the size of a golf ball)
Cumin seeds
Coriander seeds
Black mustard seeds3
1 Star anise
Fresh coriander
Salt
Olive oil4
Pepper
Method

Finely chop or grate the ginger and crush the garlic, then lightly fry in a small amount of oil. This should be done in your largest pan, as this recipe makes a lot of dahl.

Once the ginger and garlic has started to cook a bit, add one teaspoon of each of the seeds (slightly crushed) and continue to heat slowly. While these seeds are cooking, quickly chop the onions finely.

Next, allow the mustard seeds to start to pop. Add the onion and soften slowly, taking care to make sure all of the onions get cooked. Make sure you don't caramelise them.

When the onions are cooked, add the lentils and cover with water and add the star anise with lots of salt and pepper. Also optionally and to taste, you can add chili powder or sauce. Slowly cook up the mix adding water when required (tip, it is worth keeping a kettle full of boiled water for this part). Allow to cook for about 20 minutes.

As soon as it has been cooking for 20 minutes, the lentils should be soft and starting to dissolve. At this point it is helpful to fish out the star anise and either blend the mixture with a hand blender or mash it using a potato masher5, until it has a soft creamy consistency6.

Next get some fresh coriander (about half the amount you get in a medium sized fresh bunch from a supermarket) and mix into the mixture cooking for about another two or three minutes.

Serving Suggestion

Dahl can be eaten on its own as a healthy and filling dish and is great for people trying to lose weight.

Alternatively, fry some chicken pieces in garam masala, and cook some spinach, mix these into the dahl and serve with pilau rice.

Serve with German bread or a crusty roll and spicy mustard or horseradish sauce.
I have no clue if this recipe is correct, because I've never made one myself. I always buy them and I recommend you to do the same.
