All meat does NOT "taste practically the same". If it would, why then would mint go with lamb, but not with pork? You can do what you want with meat, but shit meat is shit. The other way around, you'll have to do very little with good meat. Proper beef can be sliced thin and eaten raw with no seasoning at all and still be a treat, which doesn't mean it doesn't taste better with a little fresh chili peppers and onions. Salt does not flavour meat, it enhances the meats natural flavour.
People always compare unknown flavours to chicken because chicken is very bland on itself. Actually this is not true, it is only bland because the chicken people generally know is from (semi-)industrially bred meat-chicks. If you have a proper chicken and/or if you treat it properly it is not bland at all (Caucasian chicken + laurel leaves + BBQ = Yummie & Michelin Stars if the guide would reach that far). In any case it is only sensible that people compare any new flavour with the piece of food that has the least "flavour identity" of its own.
