Being shot is far quicker than gulping blood as someone cuts into your throat with a not-so-sharp machete, I would imagine...

More then likely a bullet wound to the head will not kill instantaneously. You will bleed out and take some time to die. There are cases of people being shot in the head 6 times and surviving and another of a boy shot with a .44 Magnum point blank losing 1/3 of his skull and surviving. A shot to the head is no guarantee of death let alone a painless one.
Decapitation severs the brain from the central nervous system and kills you instantaneously, I know of no survival cases of people being decapitated but if you find any I'm willing to listen. But until then Decapitation is the only sure way to kill someone and potentially much less painful.
A shot to the head generally mashes up your brain so that even if you do survive, you'll either be in shock or have had so much of your brain displaced, destroyed or damaged that you will not know what the fuck is going on if you somehow manage to stay conscious. Never mind feel any pain.
Decapitation severs the nervous system instantly? Depends how it's done really doesn't it, since there's no classes on Decapitation 101 it often isn't. I came across a video of a Russian conscript being decapitated, he was bleeding out and making gasping, gulping noises for over a minute, I doubt he'd say he preferred it over a shot to the head...
