I think Doom was the first multiplayer for me, was about '95 at work, six of us networked together at lunch time.
No internet then, so we actualy looked forward to going to work LOL.
Also, there are a lot of games that still have levels, and bosses. They are just not defined as such. MetalGear series is a good example of this, between each the cut scenes, you are in a new level and have to fight a new boss. Same goes for the Zelda series, each new dungeon is a level, and there are bosses.
Having just a Playstation until 2 years ago, I grew up on Bosses and Levels....

I dont think you can really count targets in hitman bosses, becasue they dont have any more health than any one else. Hitman is a awsome game.

Game with bosses-Shadow of the Colossus. The entire game is pretty much boss battles.
