I know the Demo account does not record stats, but can i use it (with stat gain obviously) when i buy the full version of BF2. Or will I have to Sign up for a different account with a different name?

Accounts are server side. So yes, you'll just start from 0.
Yes you can, just make sure you hit "Retrieve Account."
Click "Manage Accounts" and then it should be under there.
