so in real life is there no way to evade a missile from hitting you? like outrunning it or making a very sharp turn?

if you plan to go into space, sure but the engine wont have enough power to come there, or it must have build in air suplys ;-)

In real life, the newer AA systems (like the patriot systems we have in the netherlands based on GGW de peel), they dont even have to hit the plane, the rocket can come close to the plane (150mtrs) and explodes which will damage the plane (deadly).

Then we have the stinger

I understood that a missile's main motor only burns for a pretty short time and so if you get one coming at you from a good distance off you can keep making course adjustments in order to make the missile have to fly further (as it's aiming for where you will be, not where you are) and, if you're lucky, further than it's capable of reaching.

Is this all BS?

A patriot has a reach of 80km, with 6 times the speed of sound.
But your right in case of a stinger or Hawk.

It all depends on the duration of the G's. The human body can have 50G's (for 1 or 2 secs)

The F16 has the abilitie to get 9G, thats the maximum for most fighter jets.

Most SAM are radar guided so flares don't affect them. But jets also carry chaffs which can distract radar.
