George Carlin & Bill Hicks, without doubt.

Jack Dee and Jimmy Carr for cheap laughs, when you don't want something as 'heavy' as Carlin/Hicks.

EDIT: Forgot to mention Bill Bailey and Billy Connolly. Two legendary institutions of British comedy .

Saw Eddie Izzard live the other week. Wasn't his best stuff but it was great to see the person who would unquestionably be my favourite comedian, (as some here know my Steam name is Jeff Vader.)

Sure he's not exactly topical and most of the time I prefer topical humour but his brand of humour is pretty awesome all the same.
