How does your mom make her pierogi? I had some a few weeks ago and really liked it. I only just remembered now since you and john were talking food and you're polish.

From scratch that's easy.Macbeth wrote:

Depending on how many servings you're making, it calls for:
onion
garlic
butter
flour
beef consomne (campbell's in a can works fine)
croutons
and gruyere cheese
saute the onions (in the pot you plan on making the soup in) with butter until the onions just start turning clear, add in the garlic and continue sauteing until the onions start to brown and before the garlic burns. whisk in about a tablespoon and a half worth of flour and whisk continuously until it turns brown. do not stop whisking. (what you are creating here is called a roux and is the basis for the flavor you are building.) Once the roux is built, whisk in the beef consomne and let it simmer at least a half hour.
When you feel it has built enough flavor, toss some croutons in a bowl, pour the soup over it, and place a few slices of the cheese over the top. pop it in the oven for a minute or two so the cheese turns nice and bubbly and voila, easy soup, homemade and better than what you'll get in most restaurants.
Edit - I remember this off the top of my head because I made the best French Dip sandwiches I've ever had on Monday night Basically the same recipe.
