I went ahead and vassalized under Rhodok rule. Siezed castle and two villages from the tip of the Sarranid Sultanate. The second castle I captured I charitably left to the Rhodok King, who in turn granted it to the only Rhodok knight with no land or wealth, helped to that decision by my encouragement of the other counts to do so. BOOM, I'm in with the Rhodoks.

I like the Vaegir archers better for defense, but I think the Rhodok crossbowmen are tougher. Castle guard is 20 Vaegir marksmen, 10 Nord Huscarls and 10 Rhodok Sergeants. I travel around with pure cavalry: two max-rank slavers, 13 sword sisters, 10 Swadian 'Knights,' 10 Sassanid Mameluks and 20 Khergit horse archers. It pays for my castle to be right next to a training camp so I can keep ranking them up without dropping morale too low with too many actual skirmishes. It also pays that I diversified my income with Guild-protected manufacturers in each city before I took a castle and ducked under the nearest king's umbrella.

If the game let me change the structure types, I'd base it on Byzantium or Greece.
