There is no such thing as French culture as a monolith. If anything, it's a derivation, a point in time. Every culture is constantly evolving. France is not the same country that it was in the 1950s, let alone the 1650s. The language has evolved. The food has evolved. The genetic pool has evolved. Maybe the borders have largely stayed the same, and yes, some rural areas are probably homogeneous enough that they can trace their inbred history back centuries, but they weren't always French.
