My head says Choy but with a bit more of a "u" slur in it. Chuy.
If he wanted to be called Chewy phonetically then he would be Chewyskywalker. Seeing as he was the creator of the site, obviously Chewyskywalker wasn't taken hence he must have wanted to be called Choy/Chuy. This is rational reasoning; unfortunately, he is called Chewy so with this in mind, I will ignore that and continue calling him Choy.
