Lets say a person starts an argument with you and ends up pushing you. You respond back and a fight starts in which you end up causing one of their eyes to be blinded, permanently.

Can you claim self defense or is that considered using way too much force?

Honestly you would have to prove you didn't have an out. It you were honestly threatened that you would be harmed by this person, you might have a leg to stand on. If you can prove he was the aggressor and you were simply defending yourself, within reason, then you would be fine.

If you blind someone over a push you should know better than to try claim self defence. But, who throws the first punch? You can't blind a man for pushing you. People have killed in fights over "self defense" cause they taught their was a genuine threat to their life. But I guess blinding is a little different than death lulz. All I'll say is, if there was a genuine threat to your life you probably could, if it was just a fight you're probably fucked.

Random story for you of where I live, and this is the truth, no trolling here.

Two guys got in a fight and one guy lost his eye during the fight(blind in 1 eye now), but during the fight he(the now 1 eye guy) kicked the the other fella so hard in the nuts he now can't have children, and wait; there's more, he kicked him so hard that apparently an infection or something happened somewhere in his groin along his leg and it looks like the leg might have to be amputated.

Like many things in the legal realm (in the US, anyway), a lot depends on the reasonableness of the person's actions. First of all, claiming self defense from a simple push is flimsy at best. If someone pushes you, it is not reasonable to whale on them with all your might. If you push someone, it is reasonable to assume they might push you back. At that point it becomes mutual combat -- as long as the two parties were reasonably matched and neither used excessive force (kicking the other when they fell and ceased fighting, for example) then it is unlikely the blinded individual will have much recourse in criminal court. (Civil court is another matter and the wildly unpredictable outcomes of civil trials makes commenting on them unwise.)

A push can be considered battery. Once a push occurs, you're allowed to strike back.

However, if your strike or push is considered beyond reasonable (you blinded the guy, i.e.), then you're liable.

Essentially, if you get in a fight and accidentally blind someone, get a good lawyer to work the jury over. If you're lucky, you might get a relatively low penalty.

Legally speaking, it depends on the local laws. Some places will allow that as a defense, some won't.

Morally speaking, was it necessary to blind the person in order to prevent permanent/serious injury or death to yourself or others?

Just try and kill the guy to be sure, that way he can't argue against you in court.

Irish law is supposedly changing soon to allow for more force to be used in self defence, not sure if it legislates for blindness though! I knocked a guy out once who was giving me and my girlfriend hassle, I had to sit with him until the ambulance came... I had it on my toes before the cops got there but I often wonder what would have been the legal position in that scenario. I think I would have been okay.

To be fair, I don't fight unless the other person has exhausted ALL other means of solving the disagreement... but if the guy pushes me then it is no longer a verbal disagreement, HE has made it a physical disagreement.

The minute someone pushes me (or even makes an explicit move to put their hands on me) I go for a knockout shot to the head, simple as that. I've done it several times in the past and will continue to do so in the future, and I've never been called to task by the law for such a practice. My physical space is my own, infringe on it at your peril!
