The composition of the ice will vary. For example Earth's polar ice caps are mainly water ice, while Mars's polar ice caps are a mixture of solid phase carbon dioxide and water ice.

The finding is a crucial first step toward learning whether the ground on Mars is hospitable, because all life as we know it requires water. Also u said it still cant be used, but it can be processed and reprocessed, kind of like salt water desalination process the same concept could be applied to the mars water and reprocess the possible carbon dioxide and water ice into drinking water....
