Ironically enough, going by your logic, why play engineer? The point of the engineer is to repair, operate, and maintain vehicles. Last time I checked, there were no vehicles on infantry only servers.
Now, I'm not going to fly off the handle at you. In my logic, anti-tank is one of the more versatile classes in the game. The rocket is an effective counter for proned, camping enemies (e.g., snipers), while the submachine gun performs well at short ranges, and somewhat well at medium-ranges. It's quite simple to dodge a rocket at long-range (of course, that involves jumping, which you are quite clearly adverse toward). You're probably thinking that Metal and I are the type of anti-tankers that fire rockets at your feet at near point-blank range, thus killing you and letting us live. However, I (and most likely Metal as well) prefer finesse with my kills, going with the "barely see the silhouette of what I hope to Jesus is an enemy soldier" kills at long range. Jumping is a mere part of this game. Just because you cannot do something in real life does not mean you can't do it in a virtual world.
Also, I try and play every class. Spec ops, medic, anti-tank, support, you name it, I'll generally use it at least once per round. Yes, I can run around, dodge a bullet and draw my gun, thank you.

I play infantry only because laptops and wireless connections are shit for playing vehicles. I like jetting and tanking, however, I don't like flying and lagging and magically appearing 5 feet from a radio tower. Same applies to tanks and ground vehicles, albeit to a lesser extent.
EDIT: Note: This does not mean I exclusively play infantry only, I just prefer it over vehicles. You can ask people from the BF2s servers, I play vehicles with them as well (although I suck more than usual on vehicles, for reasons stated above).
