I believe many people use these collective terms specifically for identification, and not in a derogatory sense. The plain fact of the matter, is that if you use words like "white", "black", "Mexican", "limey", "Jew", etc., then EVERYONE knows EXACTLY who you're talking about.
When it's a chore to tip-toe about a term to be PC, then it's time people step back, have a sense of humor about themselves and others, and stop taking offense to trivial things. Of course, this is something that will never change, but I sleep better at night knowing these people who complain are nothing more than a bunch of pussies.
