For some reason, when attempted to put anti-aliasing to 8x, it won't stay? It'll push it back to 4x? Anyone else have this problem?

you mean 6x. and this happens for everyone.

Doesn't this mean BF recognizes your card as not being able to support 8x (or 6x)? Mine seems to stay put where I want it (nice and comfy all the way to the right).

What does anti-aliasing do, anyway?

Something about getting rid of jagged edges.

I shouldn't have a problem having 8x on 2142 when my graphics is 8800GTS and I've got 8x on bf2 with no problem...

I can't get it to run 8x and I have a Core 2 Duo / 2GB memory / 8800GTS.

You'll probably have to go into your nVidia settings in order to correct this.  right click> properties>settings> advanced>Geforce (whatever card you have)>performance and quality settings.  Typically the settings are by default, application controlled--these are the optimal settings for your system in most cases.  However to enable 8x Full Screen Anti-Aliasing, change the check-mark to manual control and slide it to whatever you want.  Don't alter it in-game again, or it'll reset and you'll have to do it again.  Hopefully this should fix your problem.  I don't know if this is supported on old cards, just the newer ones (preferably Geforce 6800 or higher), so good luck.

Edit: for those of you interested in the intricacies of Anti-Aliasing, here's a Linky (From Wikipedia Entry)
