Seriously, you've gotta at least try Vegemite. Not everyone likes it, but it's great on toast (spread it thinly the first time you try it.
I don't know if you like football but if you get the chance have a look at the AFL. It's Australian football - totally different to American Football, or any other football for that matter. The preseason comp just got started so it'll be on (going to a game might be a big ask if you don't know the rules, but you can catch it on TV).
Anyway, they're a couple of things that are very much apart of Australian culture that you can check out.
The power here is 240V so unless you have appliances that can run on that don't bother (R3V4N gave the correct plug type the other guys are from Tassie).
As far as sightseeing goes, Sydney and Mebourne are covered above. Don't forget: Canberra is the capital city of Australia (if you see John Howard you might like to remind him), but it's the most boring city I've ever been to. If you drive between Sydney and Melbourne it's on the way.

If your going up the coast come and visit Newcastle its in the way up from sydney, actualy thinking about it you can realy go north without going around us . Also drop by Byron Bay, top beach etc and while your there go to Nimbin, if you wanna see a place where hippies still exist and cops dont take a second look at someone smoking a bong in the street.

2 weeks is a bit short to see Australia. Try "seeing" the States in 2 weeks. They're both continent sized (even if we are a lot of desert and only 20 million..
On the East coast see Cape Tribulation, Cairns, the Barrier Reef, Bundaberg (for the rum), Brisbane, Gold Coast (plenty of amusement parks), Fraser Island, Byron Bay, the Hunter Valley (vineyards), Sydney is a week or two alone and make sure you see the beaches, Blue Mountains west of Sydney, Kangaroo Valley, Canberra, Melbourne, Yarra & Clare Valleys (vineyards), coast drive from Sydney to Melbourne, and Melbourne to Adelaide, Tasmania is beautiful and several days to drive around, Barossa Valley near Adelaide (vineyards), Perth is nice, Margaret River (vineyards), Money Mia for the dolphins, Broome, Ayers Rock (uluru), Kakadu Park. Etc, etc.

Football season is just starting, so make sure you see a game of Ausie Rules, rugby league, AND rugby union.
Go get a Lonely Planet or similar guide and do some reading. Everyone likes different things, so some research will stand you in good stead.

We have normal power points. And vegemite is of the devil, refuse it on all counts.
If you've got time. I suggest taking that RV of yours and going across the Nullarbor to Werstern Aus. I know it's a long way from Sydney, but we have some fantastic stuff over here. And it makes a change from the Eastern State's cities.
And you have to try some of our Australian wine. Try and get the West Aussie stuff, probably from Margaret River since it's better =P
