whereby when u go online on servers, they have maps that can go up to 64 players!!
Surely they must have got it somewhere

There are a few mods that allow more bots in single player but DICE/EA in their infinite wisdom decided that single player need not really be actually included in the game. So all you get ordinarily is 16 player maps....
