You cheated the microwave effectively made some of the water evaporate (not boil) and reduce the level before all the ice had melted.

Water, when frozen, aligns itself into a grid-like structure, creating hundreds of tiny gaps and air pockets, ipso facto, ice takes up more space than water, the coke/water level lowers.

Didn't any of you pay attention to MacGyver? He explained all about water expanding when it changes to solid form when he was locked in that freezer with that chick. Remember? He used the light bulb to melt the ice and let it trickle down the pipe into the lock, where it refroze and broke the lock.

not so much air pockets as empty space.  Air is made of molecules too, which to not fit into the crystal lattice structure of ice.
