I play with my keyboard only.
WASD + cursor keys, space and Num0.

No need for a mouse, i fly all keyboard: "w a s d" and "^ < v >" all the way baby.
nice and cheap Logitech Extremem 3D pro, but i plan on getting an attachment to my headset that senses where you are looking and relays that to the moniter and game you are playing, like say im playing IL2 Sturmovik or LOMAC, this little device allows me to look around the cockpit hands free (don't turn that into some innuendo you sick people). Very usefull if being chased.

Joystick all the way, I can manage with the keyboard/mouse, but end up crashing a bunch. A joystick is truly the only way to fly, well then again im a flight sim fan, a joystick is pretty much required to enjoy the game, plus all the spare buttons right at my fingertips make micromanagement a breeze
Currently, keyboard and mouse. Shift and ctrl for throttle, Ins, left, and right click for weaponry, arrow keys for pitch and roll, and the side buttons by my thumb for rudder.

Yes there are cheaper controls, but these are top- of the line. Work great for me. Plus it makes driving any land vehicle or RIB fun to drive.
Joystick.. never even tried with keys and mouse.
