Many good examples have been mentioned, my definite favorites are Verdi (opera), Mozart (piano and opera), Chopin (piano) and Mendelssohn (strings)

Verdi and Puccini operas are by far the best.  I hold a special place in my heart for Bizet as well because Carmen was the first opera I ever went to, but Turandot and La Traviata are probably the most complete musical pieces ever made.  AMAZING

Brought the wife-unit to see La Traviata some years ago and it was her first opera ... she sat on her toes the whole performance and cried when it was finished ... she's been an opera addict since

Ah, that piano bit at the start must have influenced the same tune for the track '#1 dub' in the album Mellow Beats, Friends and Lovers. I remember someone posting youtube links to songs of the same album quite a while back, and ended up downloading it. Needless to say, the original is fantastic.

Saint-Saenz.  Amazing as well.  The arachnid and aquarium pieces are my personal favorites.  It's really interesting the amount of inspiration drawn from the animal kingdom in classical music.
