I just am not quite up-to-date on the latest computer component technology.
I was thinking of an i5 CPU, 8GB of DDR3, Windows 7, not sure what a good graphic card is these days, and a 1TB HDD, some ASUS mobo that would fit all that, a corsair PSU, not so sure what cases are good, and should I get liquid cooling?

are you going to overlock? if not just get the P67 chipset. an Antec, corsiar, or thermaltake case, and no need for water cooling.
Unless you want the corsiar self contained water block (which is super awesome)
as far as video adapter goes radeon 6950\70 or GTX560ti-580GTX
