Lunch after class is great, because you have a possibility of extension (compared to lunch before class). Do give her at least a day's notice though and make sure she doesn't have any undetachable friends in that class. Study date sounds like more time together, but it might be tough transgressing from formality to informality. I usually have no problems with friends to meet up to study and do one thing and end up an evening chatting away, but I wouldn't bet on that untill you know her better.
Edit: Silences are often percieved negatively as awkward, but they can also be considered a positive sign that something is going on. After all, platonic friends or studymates generally either find something to talk about or get up and leave.
