Right now, there's a 100 dollar difference between the E6700 and E6600. And all over a matter of .26 GHz. I don't get how if you can just OC it why there's such a major difference? Same thing with the Q6600 and Q6700's future prices, except there's like a 200 dollar difference!

I've often noticed that myself. Just because a lot of people overclock, that doesn't mean everyone does. Some people really do want a higher default clock speed (and I'm sure that it can be overclocked a bit higher).

Yeah, it's even more obvious with the Q6600 and the QX68** as the 6600 is easily OC'able 600Mhz to their speeds, but costs a quarter of the price.
