Basically because male-female relations are and always have been a 'battle' where you have to find a very delicate balance between seeming too keen and seeming too disinterested. If either party seems too keen it comes across as desperation (the overkeen party being viewed as 'beneath' the other). If either party seems too disinterested then one assumes the other doesn't like them. Basically the early period of a relationship oscillates between showing enough interest and showing disinterest in turn (to compensate for having shown interest and to make them think 'He/She must think he/she can do better than me- I'll show him/her!'). It's complicated. Eventually there arrives a 'victory point' wher you've ensnared her good and proper and it doesn't matter how disinterested you are in her she'll fawn over you like an abandoned puppy looking for attention.
