All the Weaps and unlocks can be found above. However, actual chracteristics of each weapon are omitted, so i'm going to post some speculation. Please note that none is based on anything not in the above link. Please feel free to add your own comments, especially those who have played the Beta when it comes out.
Assault
EU - SCAR 11: The EU's standard assault rifle. It has less recoil than the FA-37, so retains better accuracy in full auto, but each round does less damage as a result. Expect it to be like an automatic M16
PAC - FA-37: PAC's standard assault rifle. Has more recoil than the SCAR, but is equally accurate on single shot. Does higher damage. Expect it to be similar to a AK.
Both - MHUB: Instead of a medic bag, this will be thrown down and have a healing range, similiar to holding a medic bag now or a supply crate. Currently each soldier only gets one between resupplies.
Unlocks (both)
Defibrillator: Expect it to be the same as the current one. Looks better though.
SMK-1: Smoke Grenade. Hopefully it will be better than the current one.
BAUR H-AR: Heavy assault rifle. Described as having high damage but weighty, so should be similar to the current G3.
VOSS L-AR: Light assault rifle. Lower damage than the other rifles, but has a larger clip. Designed for supressive fire.
PK-74 Rocket: Similar to the current GL, an underbarrel rocket. Will probably be single shot only.
Herzog AR-Shotgun: Underbarrel shotgun. Probably single shot only.
Advanced Med Hub: Heals like the normal hub, but also contains "muscle stimulants", suggesting it could increase your speed, sprint length, or health temporarily.
Recon
EU - Moretti SR4 Sniper: Semiautomatic, but has masses of recoil. Essentially like the M24/L96/M95 except that you wont have to unzoom bewteen shots.
PAC: Park 52 Sniper: Essentially the same as the SR4, but an upgradeable scope is mentioned.

RDX Demopak: The new C4 explosive.
Lambert Carbine: The only carbine in the game. Similar to M4, less damage than assault rifles, but higher accuracy. Possible limited to burst, or will have burst included.
APM: The new claymore.
Active Camo: Will reduce visibility by 90%. Apparently it has no time limit, but when any other weapon is selected it will deactivate. You wil probably still appear on radar scans/UAV but this is unconfirmed.
Engineer
EU - Mitchell AV-18:
PAC - Sudnik VP : Shouldn't differ too much from the standard SAW/ERYX.
EU: Turcotte SMG:
PAC: RK-11 SMG: Similar to the current anti-tank SMGs, good close combat weapons, but bad at range. Both appear to have small scopes instead of the current sights.
Both: HOFF-3000: Expect a lot of "The Hoff" jokes. Its the new wrench, but it looks kinda like a staple gun. Apparently its a nano-torch (eh?), so hopefully it lights up a bit.

Koenig H-AVR: Sort of a cross between the M95 and an RPG. Seems to replace the rocket launchers, but lacks guidance. Instead it has a much higher speed (similar to the current RPG) but its specifically designed to counter vehicles (unlike the M95 which is rubbish). Hopefully it wont be too accurate to prevent it being used as a sniper rifle.
PDS-1: Essentially a vehicle UAV, it will display nearby vehicles on the map for all squadmembers.
Motion Mine: A weak anti-vehicle mine that can track enemies. Probably designed for cars/APCs rather than tanks/walkers.
EMP Mine: Stationary mine that fully disables a vehicle that runs over it.
SAAW 86: Another rocket launcher. Unfortunately EA have accidently copied the AV-18 pic and description onto it, so no info about this yet.
Support
DICE have stated that LMGs will start off inaccurate and will become more accurate the longer you fire them. However, this feature may disspaear in the final version.
EU - FA-6 LMG: Standard EU LMG. Smaller clip capacity than the K-80, but higher damage. Probably like the RPK.
PAC - K-80 LMG: Standard PAC LMG. Larger clip capacity, less damage. Probably like the M249.
Both - Armour Hub: Thrown down, it acts like a supply crate, giving ammo in a radius.
Unlocks (both)
EMP Grenade: Temporarily disables machinery. Slows vehicles, but doesnt necessarily disable them (multiple grenades might).
Clark 15B Shotgun: Gas powered with a magazine, probably similar ot Jackhammer or Benelli M4.
Ganz HMG: The new PKM. Hopefully not quite as good.
IPS Shield: A square, temporary shield that you can set up for cover from infantry weapons. Won't withstand vehicles.
Squad Leader Unlocks
SLS Beacon: Placed by a squad leader, it allows squadmates to spawn on the beacon via drop-pod. Since you're dropping rather than appearing, people can spot you more easily.
Accipiter Drone: A flying drone that hovers above the squad leader. It has dual machineguns, and acquires targets through the squad "spotting" them.
General Weapons
Both - Pistol: Similar to current pistols.
Both - Knife: Knife kills will get you the dog-tag of the enemy, giving you a record of the people you've knifed.

FRG-1 Grenade: Similar to current grenade.
