That maneuver where he would pull the stick back and keep going straight is called the Cobra maneuver and there are only a few jets that can do that.  I don't know of any American jets that can do that but it is a cool maneuver.

yeah the cobra manuver is the shit... too bad the su in bf2 doesnt have vector thrusters otherwise it could pull that move off too.
