Of course you can, normally my dad grinds tracks into walls if he's running pipes or wires then plasterboards over the top, it's quick and looks better instead of boxing off the pipes etc.
It's also an extra layer of insulation I guess and easier to tile onto rather than straight onto brick/blocks.

It's quicker plastering onto plasterboard, whereas brick is tedious due to having to seal it with pva first then waiting for it to dry, then plastering.
