Tunnel down, make note of any cave systems you discover and start branching out at the deepest sideshaft you can reach. Keep an eye out for huge, open caves (especially lit by magma), because you have a bigger chance of seeing something you want, if it exists down there.

Pretty much most material will block it, but having spare cobblestone is going to be unavoidable if you're digging in any direction. But yeah, water's important. Even when digging to the side, you could wind up dropping magma on your head if you don't move to the side fast enough. Also keep plenty of torches for deep areas.

What I've been doing so far is to dig down to the very bottom, and then use the top bedrock layer as my floor. I have then hacked my way through straight corridors with 2 blocks between them.

I have found a decent amount of diamonds that way, but on the other hand, they are also kind of rare.

Also, I have not been able to find any huge caverns, which might have helped a bit!

It looks like just above bedrock is not the best place to mine... I guess I'll move a few blocks up, and mine there instead. I really want to find some caves to explore as well.

Seems like you just haven't found the most ideal spot. I uploaded a savegame somewhere in this thread if you wanted to give it a look. From the start, after I established a rudimentary base, I boated around until I heard a zillion zombie noises in the water, shored up a shaft and started digging. Once I got below the sea floor, there was no end to bits of the same enormous tunnel I kept digging through.

On your game, if you can't really find anything by the time you hit bedrock and dig around here and there, it's time to pull up stakes, store your cobblestone and go look for a natural cave system with surface access to explore.
