I have the 16GB 1st gen iPod Touch.  My current favorite apps are:

AirSharing - wireless network sharing, use your iPod as a hard drive - no cables!  easily the best app.
App Sniper - keeps track of the latest apps, price cuts on apps, and apps you want to "snipe" or buy when they fall below a certain price
Sportacular - latest sports scores, refreshes every 30 seconds, you can add fantasy teams player by player
AIM - AIM iPod app
Balance - helps keep track of your purchases and paychecks!
Trace - novel idea, draw-your-own-path platfromer
JellyCar - wacky physics-based car game
TapDefense - really fun free tower defense game

ooh yeah, forgot Cube Runner.  that game never gets old either.  i have aruond that many too, i just listed my favorites.  i have Remote too; although I don't use it much, it's awesome.

Lightsaber - Kinda corny, but pretty cool
1337pwn - Useful for showing my friends my semi- gamerscore
Remote - So fucking useful for parties and stuff
Crash Kart - Way too overpriced. It's not bad, but it wasn't worth the $10.
Hold 'Em - So worth the money. So entertaining. I love it.
AIM - Very useful, but drains the battery.
Obama '08 - Was useful for finding events and stuff
CannonGame - <3
TWC - Also very useful, more detailed than the standard weather app
Shazam - Easily the coolest app on iTunes.
NYTimes - Mobile News is the best, but I use this as a backup.
Mobile News - Easy to use...very efficient.
Tap Tap - Holy shit <3

SportsTap - also see above
AstroTilt - It's okay, but BClassic is better
aSleep - hadn't had too much use for it, but it's a good substitute for one of those natural noise clocks
Tris - Can get frustrating, but overall is fun.

FireDrop - pretty gun
Audi A4 - steering is kinda buggy but it's still fun
WeatherBug - good backup to TWC
PegJump - VERY fun

Depending on what Firmware your on, You have to jailbreak your device.

- WinPwn if your on Windows

- PwnageTool if your on a Mac.

Jailbreaking takes like 2 minutes max, And allows you to installed 3rd party apps that are not signed by Apple.

Their also free, But you should really just consider upgrading to Firmware 2.1 - 2.2 for the AppStore.

Also if in the rare case of you fucking up the Jailbreak process (it's automated for a start), You can restore your device using iTunes.

I first used WinPwn to jailbreak, And yeah thinking about it..

It did take abit more than 2 minutes.

Free

TapDefense is a must-get. It's a free game with gameplay like "tower defense" if you've ever played it.
Darts isn't bad for a free game, and I also got
Checkers, Touch 4 (Connect 4), and TicTacTouch.
For wordplay I have hangman and Word Warp.
Solitaire Free isn't bad.
Topple is a decent "build a tower of blocks" game.
Cube Runner is decent,
and Trace is a fun draw-your-own-lines platformer.

My sister got Scrabble, which I took. Not bad, but not worth the pricetag unless you really enjoy scrabble or have someone who will play it with you occasionally.

She also got Spore (lulz), which has kind of repetitive gameplay, not really worth the money IMO but decently entertaining.

Labyrinth is entertaining (tilt-table marble game) but frustrating after a while.

I just got "Wings" "Chopper" and "Crash Kart" with an itunes gift card.

Chopper I've played for about 1 minute and I can already tell is worth the 99c price tag, pick it up for sure. Fly around in a chopper, picking up civvies and shooting down baddies. Good graphics for an iPod and good gameplay. It's on sale right now, pick it up while it's cheap.

Wings was $1.99 and not worth the money IMO. It's a flight sim, but controls aren't all that exciting and landscape is repetitive. No landing, taking off, or crashing either. Here's to hoping for an update.

Crash Kart (Bandicoot) seems pretty good, a mario-kartesque game with good controls and pretty decent gameplay. Recommended if you want a battle racing game, would probably buy if you have some spare itunes money laying around.

Yeah I like Chopper a lot too, especially with the $.99 price tag.

Fish Tycoon is also a pretty fun paid app - try the Lite version first to see if you like it.
