I was just wondering if there was an actual performance increase that is noticeable or applications that require it.
I doubt that there is a noticeable increase in performance at all - I can't imagine that PopTart is doing anything that would really require squeezing every minute improvement out of his parts. But the general answer is often the best: because he can.
Maybe some heavy photorealistic gfx manipulation program he is using?

I bumped up to 16GB due to my wife's video editing needs and the current prices of RAM (paid $61 shipped). Last video she made (via Vegas PRO 10) used all available RAM and then BSOD'd twice during the rendering process. Doubt I'll OC it, I just like to have that option in the future if the need arises.
If you aren't familiar with this RAM it'd be worth educating yourself on it. Because of the 30nm design it runs at low voltage ([email protected]). People are able to hit 1866mhz without upping the voltage and when bumped to 1.5v, 2133mhz can be achieved, without the need for a heat spreader

The main reason I jumped on this RAM is the ultra-low profile (less than 1/2 the height of the old G.SKILL). I wanted 16GB but didn't want to deal with moving or modifying my hyper212 just to fit the 4th stick of RAM.

I never knew that there was such low profile RAM available (but then I never looked, either). I've got a Corsair water-cooled CPU cooler, so I don't have an issue with space but that's great that there is a product like that for those that do. My old air cooler prevented me from using two of my four slots, so instead of getting new RAM I got a new cooler. XD
When I used to have a Dell, it used DDR2 3200 which Kingston later on started making the same way at half-size like that:
