Basically because male-female relations are and always have been a 'battle' where you have to find a very delicate balance between seeming too keen and seeming too disinterested. If either party seems too keen it comes across as desperation (the overkeen party being viewed as 'beneath' the other). If either party seems too disinterested then one assumes the other doesn't like them. Basically the early period of a relationship oscillates between showing enough interest and showing disinterest in turn (to compensate for having shown interest and to make them think 'He/She must think he/she can do better than me- I'll show him/her!'). It's complicated. Eventually there arrives a 'victory point' wher you've ensnared her good and proper and it doesn't matter how disinterested you are in her she'll fawn over you like an abandoned puppy looking for attention.

Showing no interest in a girl thats around is off putting to said girl. I'm a interesting looking person, and I know this. So, I know that the usually pick up lines and flirting doesn't work.

What seems to work, somehow, is that if I go out and see a few girls in a bar, they're doing thier best to get the attention they love getting, and if I sit right nearby and act like I don't exist. They try even harder to get attention.

So, if you are interested in the one particular girl, you probably don't show others attention. If a girl isn't getting attention, seems like they start thinking,

"maybe I'm not pretty. No I am!....wait why doesn't he want me?! does he get girls hotter than me?! I! am hot! I'll prove it to myself! I CAN get him!"

Not all girls are like this, but alot seem to be.

As to the OP, maybe it is our animalistic behavior embedded in us. Look at other species and notice the lengths that the males must go through to win over females for mating purposes. We call it the birds and the bees to explain "mating" for a reason. The fact is in nearly all species... if you want the booty you had best earn it.
