Holo-armaments - I wondered why the shows never did too much spectacular stuff with tactical away teams. Then ST: Elite Force came out and established a precedent (at least for ST gaming). Then ST Online, with all its flaws, managed to let us gear up with bits of futuristic armor and holo-projected targetting systems. Of course, who can forget that Picard killed a borg with a holographic tommygun in First Contact?

Tie Defender - big, heavily armored, shields, a good turning radius...these would have made it much harder for the Rebel Alliance at the Battle of Endor

lightsabers - doesn't even need an introduction. they're so cool that they're made fun of all the time.

force lightning, force grip - these were more fun in the Jedi Knight series than any other. Forced lightning, if the slow motion cheat was used, would glitch and just spew bolts all over the screen with enormous kinetic impact on anything they killed. Later, force grip was updated, allowing you to move enemy players and npc's wherever you wanted, slamming them against surfaces, flinging them great heights or dropping them off cliffs.
